Grand Barossa Cabernet Sauvignon 2015
Tasting Notes

Lifted aromas of blackcurrant, blackberry and vanilla are accompanied by vibrant, dark berry fruits on the palate. The finish is long with fine-grained tannins from sixteen months maturation in a combination of new and older French oak hogsheads.

Although drinking well now, this wine may be cellared for up to ten years from vintage.

Winemaking

For our Grand Barossa wines we select grapes grown throughout the Barossa and its myriad of sub-regions. It is this tapestry of ‘terroirs’ which enables us to create our classic and refined house style. 

The grapes are destemmed, but not crushed, and fermented in small stainless steel open fermenters. Fermenatation takes place over 7 days with twice daily hand plunging.

After draining the free run juice, the skins are gently pressed in the JLB Vaslin Bucher press and transferred to barrel for 16 months maturation in a mixture of new and seasoned oak barrels.

A red and dark fruit spectrum of currant, dark plum and cherry notes cascade across a fully bared palate, tucked in by an edgy structure of cabernet's stiff upper lipped grainy tannins, dutiful acidity and a forest-like substrata of flavours comprising capsicum, mint, bay leaf and anise. Almost drinks like a cooler climate cabernet despite its origins. Drink By:2028

Generous, offering a plush mix of blackberry and blueberry flavors that gain complexity from notes of Turkish coffee, cigar box and green peppercorn. Dense, fleshy tannins and a surprising juicy finish complete the package. Drink now through 2030

Inky ruby. Highly aromatic scents of ripe black and blue fruits, vanilla and floral pastilles. Plush, smooth and seamless on the palate, offering smoke-tinged blackberry, licorice and bitter chocolate flavors complemented by subtle oak tones. Fruit-driven and approachable, finishing with mounting tannins and an echo of candied licorice.
