Noble Baron Cabernet Sauvignon 2007
Tasting Notes

Ruby red colour. Enticing aromas of blackcurrant, tobacco, green tea and mint. The palate is rich and concentrated whilst the elegant French oak gives a ‘subtle lift' to the wine. Soft supple tannins give the wine added texture and weight and the long, lingering finish ensures this wine will age gracefully for 10 years plus.

Winemaking

Hand picked, basket pressed and unfiltered, the gentle unobtrusive winemaking has captured the subtle and intriguing characters of this Cabernet Sauvignon. The grapes were destalked (separating berries from the bunch) and placed uncrushed into small stainless steel three tonne fermenters. A cultured yeast was used to start the fermentation and the tanks were hand plunged spending 14 days on skins at 28° C. The skins were gently pressed in the JLB Vaslin Bucher basket press. Malolactic fermentation in French oak prior to eighteen months maturation in a combination of new and older French oak hogsheads. A further 12 months bottle aging prior to release gives a more
harmonious and perfectly balanced wine.

Blended of 89% Cabernet Sauvignon, 6% Cabernet Franc and 5% Shiraz, the 2007 Noble Barossa Cabernet Sauvignon comes from a single vineyard in the Bethany sub-region. Deep garnet-black colored, it has intense notes of creme de cassis, kirsch, tar, anise, menthol and a whiff of leather. Rich and full-bodied with a medium-firm level of fine tannins, it has a good amount of invigorating acid and a long finish. Drinking now, it should cellar to 2016+.
