The classic regional characters of dense, spicy blueberry fruit along with hints of liquorice, plum and all-spice are all delicately interwoven.
Made from the grapes of vines that are over 100 years old. Hand-picked, basket-pressed and unfiltered, the gentle unobtrusive winemaking has captured the subtle and intriguing characters of these centenarian Shiraz vines. The grapes were destalked and placed uncrushed into small stainless steel open fermenters and are hand plunged during fermentation, spending 15 days on skins at 28° C. The wine was gently basket pressed and racked to finest oak barrels for malolactic fermenatation.
Further maturation ensued in a combination of American and French oak hogsheads and barriques for 22 months has resulted in a wine of great structure and finesse.
The wine was neither fined nor filtered before bottling to further enhance the character of these special vines.
