Our house style of Barossa Shiraz, lifted aromas of blackberry, plum and black pepper with spicy, dark berry fruits on the palate has benefited from the addition of Primitivo, native to southern Italy, adding vibrant cranberry, raspberry and strawberry flavours. The finish is long with fine grained tannins from eighteen months maturation in oak.
This unique blend is sourced from our growers’ vineyards in the Barossa sub-regions of Bethany, Kalimna (bush vine Primitivo), Lyndoch, Stonewell, Tanunda and Vine Vale. The grapes were de-stemmed, but not crushed, and were fermented separately spending seven days on their skins in open fermenters with regular hand plunging and pumping over to more gently extract colour, flavour and tannin. This was followed by careful basket pressing and malolactic fermentation in a combination of new and seasoned American and French oak hogsheads prior to eighteen months’ maturation in our cellars.
