Lifted aromas of nectarine, peach and pear are accompanied by citrus fruits on the palate with an extensive finish framed by subtle vanilla notes and a hint of spice from maturation with French oak.
Picked early in the morning, the fruit was delivered cool to the winery. Gentle pressing to minimise phenolics and cold settling preceeded a long, cool fermentation averaging 14°C. A small portion (5%) of the Chardonnay was fermented in seasoned French oak to give added complexity and structure to the wine.
