Tasting Notes

This wine displays lifted aromas of blackberry, blueberry and white pepper supported by classic cool climate Shiraz characters of spicy, dark berry fruits on the palate.

The extensive finish is framed by elegant, fine-grained tannins from sixteen months’ maturation in a combination of new and seasoned American and French oak barrels.

Winemaking

The grapes are destemmed, but not crushed, and spend seven days fermenting on their skins.. We undertake the classic winemaking practice of remontage at least twice daily during ferment to more gently extract colour, flavours and tannins.

The wine is then carefully pressed for a gentle extraction, and soft mouthfeel to the finished wine. It then undergoes malolactic fermentation in barrel, before being transferred to a selection of new and seasoned French and American oak to mature for 12 months.
