Tasting Notes
Ebenezer is located in the Northern most reaches of the Barossa and wines from this region are typically characterised by lifted aromas of lavender and spice. The palate is full of red fruits, leather, cedar and complex spice. We recommend cellaring for 10 years.
Winemaking
The grapes were destalked (separating berries from the bunch) and placed uncrushed into small stainless steel open fermenters. A cultured yeast was used to start the fermentation and the tanks were hand plunged spending 7 days on skins at 28° C.
Further maturation in a mixture of French and American Oak for 15 months has resulted in a wine of great structure and finesse.

The palate is full of red fruit, leather, cedar and complex spice. I find this a very elegant wine. Although full-bodied it promises much on the nose and delivers an integrated, textured experience on the palate. I love this wine with cold cuts, cheese, olive oil and good, crunchy bread (no, it’s not Italian in style at all, but works beautiful with a peasant’s morning tea).

Three Shiraz vintages, three different Barossa vineyard profiles (Greenock, Ebenezer and the Lyndoch), three very different wines and all released at the same time. Crafted by Tim Smith they’re top-notch wines that offer an opportunity to explore different Barossa Styles. Highly recommended. Drink with : Kangaroo fillet.

The Château Barossa Valley Shiraz 2007The bouquet shows restrained black fruit, mocha, bramble and spicy oak; medium-bodied withsoft and quite fleshy fruit from start to finish; shows a little heat on the finish. Cork. 14.5%RATING 90 DRINK 2015
