Tasting Notes
The dark, brooding regional characters of plum and licoriceare to the fore of this wine. The palate is focused and linear, with darkbitter chocolate notes and an elegant long persistent finish. We recommendcellaring for 10 years.
Winemaking
The grapes were destalked (separating berries from the bunch) and placed uncrushed into small stainless steel open fermenters. A cultured yeast was used to start the fermentation and the tanks were hand plunged spending 7 days on skins at 28° C.
Further maturation in a mixture of French and American Oak for 15 months has resulted in a wine of great structure and finesse.

The dark, brooding regional characters of plum and liquorice are to the fore of this wine. The palate is focused and linear, with dark bitter chocolate notes and an elegant long persistent finish. What a wine! It’s dark, mysterious, full of cigar box and forest floor aromas and instantly mouth-filling with dark berries and plums. The finish is long, integrated and spicy. I absolutely love this wine. Enjoy it with a classic daube of beef cheeks, cooked in red wine.

Three Shiraz vintages, three different Barossa vineyard profiles (Greenock, Ebenezer and the Lyndoch), three very different wines and all released at the same time. Crafted by Tim Smith they’re top-notch wines that offer an opportunity to explore different Barossa Styles. Highly recommended. Drink with : Kangaroo fillet.

The “Terroirs of the Barossa” series illustrates the sub-regional variations in the Valley... there’s 400 cases of this and it comes off vines of 65 years and over. I think it’s easily the best of this year’s releases. There’s a spicy, peppery aspect here over black fruit, chocolate and licorice. In the mouth full bodied and warm but well balanced with dark earthy fruit, firm tannin and a good finish. It’s a stylish wine and one with a good level of complexity, with the promise of more to come. Tasted : Oct08 Closure : Cork Drink : 2008 - 2020

A great deal of spice character on the nose; it showed its oak a little more than the others in the trio. Good weight in the mouth with a very slow journey across the palate, flavours were all on the rich side. Well received but not the favourite of the group. 92 points
