‘The Château’ Cabernet Sauvignon displays deep, rich purple and red hues. The bouquet has lifted aromas of blackcurrant, redcurrant and spice on the velvety smooth palate with hints of cedar and mint. The extensive finish is framed by elegant, fine-grained tannins from two years’ maturation in a combination of new and seasoned French oak barrels.

Winemaking

The grapes for this year’s The Chateau Cabernet Sauvignon were grown on the sandy loam soils of blocks 12 and 16 of our Bethany vineyard which was first planted in 1960.

The grapes were destemmed, but not crushed, and spent seven days on their skins in open fermenters with twice daily hand-plunging and pumping over of the cap to more gently extract colour, flavours and tannins. This was followed by careful basket pressing and malolactic fermentation in a combination of new and seasoned French oak barrels prior to eighteen months’ maturation in our cellars.

“From a vineyard planted in the 60s in the Bethany sub region of the Barossa Valley. Juicy wine, so much so that you might even call it ‘perky’. Sweet redcurrant, raspberry and aniseed, Turkish Delight, some nougat oak and spice. Medium to full bodied, plump sweet red fruits and plum, grainy tannin makes a play, but stays within bounds. Some tobacco and savoury stuff and a well-rounded finish. Not the most defined or precise of wines, but lovely and fleshy and good to drink. Barossa Cabernet can be a good thing to tuck into.”

A juicy, fruity wine with lots of ripe-fruit and currant character. Full body, silky tannins and a long, flavorful finish. A little jammy but shows focused, bright fruit character. Drink or hold. 91/100
