The Chateau Single Vineyard Cabernet Sauvignon 2018
Tasting Notes

‘The Château’ Cabernet Sauvignon displays deep, rich purple and red hues.

The bouquet has lifted aromas of blackcurrant, redcurrant and spice on the velvety smooth palate with hints of cedar and mint. The extensive finish is framed by elegant, fine-grained tannins from 18 months' maturation in a combination of new and seasoned French oak barrels.

Winemaking

The grapes for this year’s The Chateau Single Vineyard Cabernet Sauvignon were grown on our estate vineyard in the cool climate of the Eden Valley.

The grapes are destemmed, but not crushed, and spend seven days on their skins in open fermenters with regular battonage to more gently extract colour, flavours and tannins. Following fermentation, the wine is carefully basket pressed prior to maturation in a combination of new and seasoned French oak barrels for 18 months.

Full, weighty and richly expressed, the wine shows complex aromas of blackcurrant, plum, dried herb, roasted nut and subtle floral notes on the nose, followed by a gracefully powerful palate that’s dense and lingering. Magnificently balanced and flavoursome with a terrific long, refined finish. At its best: now to 2032.

Yes, it's got unlimited flavour... they did select 36 rows, and it has soft, savoury bay leaf/tapenade nuances to accompany blackcurrant fruit flavours. Full-bodied, but balanced
