The Chateau Cabernet Sauvignon 2021

The Château Single Vineyard Cabernet Sauvignon displays deep, rich purple and red hues.

The bouquet has lifted aromas of blackcurrant, redcurrant and spice on the velvety smooth palate with hints of cedar and mint. The extensive finish is framed by elegant, fine-grained tannins from 18 months' maturation in a combination of new and seasoned French oak barrels.

Winemaking

 The Chateau Single Vineyard Cabernet Sauvignon is grown on our estate vineyard in the cool climate of the Eden Valley.

The grapes are destemmed, but not crushed, and spend seven days on their skins in open fermenters with regular battonage to more gently extract colour, flavours and tannins. Following fermentation, the wine is carefully basket pressed prior to maturation in a combination of new and seasoned French oak barrels for 18 months.

The grapes here have come from a single Estate vineyard in the Eden Valley. They are destemmed, not crushed, and then spend a week on skins in open fermenters with regular bâtonnage. After fermentation, basket pressing to a mix of French oak barrels, new and seasoned, for eighteen months maturation. Dark crimson in colour, the nose rolls through in waves, with aniseed, blackberries, coffee grinds, dry herbs and cloves. Well focused, indeed seamless, through to abundant, very fine tannins. Balance and length here. This wine is certainly attractive now, but for those with a little patience, it will provide even more rewards over the next eight to twelve years.

This is beautifully styled and enticing with cassis, roasted nut, subtle tobacco and cocoa characters. The flavoursome palate delivers terrific fruit power and persistency, well framed by refined texture and polished tannins. Supple and structured at the same time, leading to a lengthy silky finish. At its best: now to 2038.

Deep ruby hue with dark plum and bitter chocolate aromatics. Ripe dark fruits, rich notes of chocolate and a savoury ironstone undertone all combine to bring a sense of weight and drive to the palate. Bringing it all together are granular tannins which persist right to the long and bone-dry finish. A good steak would be recommended alongside. 2023–2034
