The Everest Old Vine Grenache 2016
Tasting Notes

Dense purple colour, the nose displays notes of blueberry, kirsch, marzipan and an intense licorice spice. The wine is incredibly dense and multi - layered yet still retains an elegance and softness as well as a textural purity that few wines can achieve.

Supple tannins from the gentle press merely complement the fruit, silky and rich yet impressively interwoven into the wine. The fruit/acid balance ensures excellent length and provides a purity of structure for long term ageing.

Winemaking

Fermented in French oak puncheons and hand plunged fourtimes daily. Basket pressed and completed malolactic fermentation and 18 months maturation in French oak barrels on lees to maintain structure and fruit profile. Minimum two years bottle maturation in our cellars before release.

Medium to deep red colour with a tint of purple, the bouquet holds sweet berries and a hint of menthol. It's very lush and sweetly ripe, a decadent wine. The mint is the attractive peppermint kind. Good spiciness, too. The palate is decadently sweet-fruited and lush, jammy and succulent...Drink 2019-2031

A stunning expression of the variety; the perfumed bouquet shows raspberry, dark cherry, olive, thyme and floral aromas, leading to a concentrated palate that’s expansive and mouthfilling with a seamless flow. Varietally pure with sensual complexity, making it irresistible and gratifying. At its best: 2022 to 2040.

From a small parcel of 100yo dry-grown bushvines. Hand-picked and sorted into a 1t open fermenter. Basket-pressed before 18 months maturation in used French oak. Ultra-traditional full-bodied wine endowed with ample supply of heat. Drink by 2026

Medium crimson. Developed liquorice, sage, musky plum redcurrant aromas with underlying roasted walnut, polished leather notes. Generous, warm and supple with sweet musky plum, roasted walnut, praline, chinotto flavours, fine silky textures and integrated long acidity. Aniseed, liquorice heat at the finish. Voluminous and richly flavoured with secondary characters giving complexity and interest... best to drink soon.
