The Everest - The Château Cru Shiraz 2012
Tasting Notes

Dense ruby colour, with an intense, enticing nose of rich, red berry fruits and subtle French oak.

The wine is incredibly dense and focussed with a richness and purity that simply exudes top class Barossa Shiraz. Rich dark chocolate, mocha and cedar spice are all to the fore but the central core is highly focussed. 

Supple tannins from the gentle press merely complement the fruit, silky and rich yet impressively interwoven into the wine. The fruit/ acid balance ensures excellent length and provides a purity of structure for long term ageing.

Winemaking

Fermented in open fermenters over 9 day period, daily hand plunging & pump overs. Only the highest quality, drainings run off to complete MLF in oak and then matured for 23 months in French oak, matured on lees to maintain structure and fruit profile.

Deep, dense, profound colour, red/purple and youthful. Concentrated and latent on the nose, black fruits, pinpoint ripeness and elegant. Sweet, ripe, essency flavour of dark berries and plums, a lush wine with masses of fruit and an array of gorgeous flavour, perfectly timed ripeness and altogether sensational.

This is a big black glass staining number for sure. Red and black berries, mocha and dark chocolate, cinnamon toast and vanilla. Full bodied, lovely ripeness of fruit combined with excellent definition – not sloppy in the slightest – smooth grained tannin, even acidity, layers of spice and a very long precise finish. Slight grittiness in the aftertaste, but altogether convincing. Price is as high as the quality.

A blend of grapes grown in Nuriootpa, Ebenezer and Lyndoch, the 2012 The Everest Shiraz spent 23 months in oak. That's left a strong impression on the wine, with vanilla, baking spices and menthol notes framing boysenberry and blackberry fruit. It's full-bodied and still muscular despite its age. Big, bold and unabashedly Barossan, it offers a mouthful of flavor, firm tannins and a juicy, mouthwatering finish. Drink 2020 – 2035
