An intense, enticing nose of rich, red berry fruits and subtle French oak. The wine is incredibly dense and focused with a richness and purity that simply exudes top class Barossa Shiraz. Rich dark chocolate, mocha and cedar spice are all to the fore but the central core is highly focused

Winemaking

Only the very best grapes are selected from individual vineyard blocks in exceptional vintages. Hand-picked, hand-sorted to 1 ton open fermenters with four times daily plunging and careful basket pressing. The highest quality parcels from this years fermented wines are set aside for maturation in the finest French and American oak.

A barrel selection is made of only the finest wines to produce the pinnacle of that vintage – The Everest.

Deep crimson. Classic ultra-fine Barossa Shiraz with intense blackberry mulberry praline aromas with underlying roasted chestnut/ roasted hazel nut, herb garden notes. Plush yet refined in style with deep set blackberry pastille mulberry fruits, underlying paneforte/roasted chestnut notes and plentiful velvety tannins. Finishes chocolaty firm with a zip of aniseed. Superb density, volume and freshness.

Distinctive aromas of blackberry, Black Doris plum, dark chocolate and cedar on the nose with nuances of cake spice and floral. Superbly ripe and pure, with immense complexity, the wine exhibits exceptional depth and power, while remaining perfectly balanced by plush tannins. It’s substantial and brooding with a persistent refined finish. At its best: 2025 to 2047.

An extraordinarily rich, decadently luscious shiraz that needs air, and needs to be drunk rather than just tasted. Licorice; dark chocolate. Massive fruit sweetness, soft as silk tannins: it’s all in gravity-defying balance. A pinnacle wine indeed.

In contrast to the 2016 Everest, CT's 2017 The Everest Shiraz is sourced from 100-year-old plantings in Vine Vale and Marananga. Matured in mostly French oak (86%) for 18 months, then in bottle for another two years prior to release, it's ready to drink now for its massive fruit and supple tannins. Hints of vanilla, cedar and maple syrup accent plums, blackberries and charred beef, while the finish is long and mouthwatering. 112 cases produced. Drink Date: 2021 - 2035
