Tasting Notes

Dense ruby colour, with an intense, enticing nose of rich, red berry fruits and subtle French oak. The wine is incredibly dense and focussed with a richness and purity that simply exudes top class Barossa Shiraz. Rich dark chocolate, mocha and cedar spice are all to the fore but the central core is highly focussed.
Supple tannins from the gentle press merely complement the fruit, silky and rich yet impressively interwoven into the wine.
The fruit/ acid balance ensures excellent length and provides a purity of structure for long term ageing.

Winemaking

Fermented in open fermenters over 9 day period, daily hand plunging & pump overs. Only the highest quality, drainings run off to complete MLF in oak and then matured for 24 months in French oak, matured on lees to maintain structure and fruit profile.

Neither fined nor filtered, with some impact on the brightness of the colour; it is the best wine of the vintage, and the vintage itself has to be 'truly exceptional'. Some would question whether '09 could be thus regarded, but this is certainly a wine full of power, character and flavour, the last coming in part from 22 months in new French and American oak; there are interesting changes in flavour as the wine moves across the palate, from black fruits to red to spicy/savoury nuances. Deep garnet colored, the 2009 The Everest Shiraz opens with intense scents of kirsch, dried cranberries, mulberries and blackberry tart with whiffs of cedar, potpourri, Indian spices, peppered salami and fertile loam in the background. Full-bodied and richly fruited in the mouth, it reveals layers of complex flavors supported by a medium level of grainy tannins and up-lifting acidity before finishing with great persistence. Approachable now, it should drink beautifully to 2023+.
